I love cooking breakfast. I especially love cooking breakfast on the weekend, when I can take my time and really create something.
This morning, I created a yummy, simple, local breakfast.
Simple to recreate:
You will need:
a super small onion, minced
a small slice of butter (to add to the pan first)
8 small red potatoes, cleaned and thinly sliced (you can peel them; I left the skin on)
black pepper to taste
grated cheese to taste
minced chives to taste
two slices of bread
2 dozen blackberries, crushed
1/4 tsp. sugar (to add to the crushed blackberry mix)
extra fruit for fun
1. Start with a small bit of butter (real butter) in a frying pan. Add minced potatoes until they’re good and brown.
2. Thinly slice the potatoes, and add them to the pan. Mix them around the pan to cover them with the butter/onion combination. Add chives.
3. When the potatoes start to brown, add 4 eggs; scramble
4. When eggs are finished, add to plate, garnish with bread and crushed blackberries and fruit, if desired.
